Chocolate Covered Dates

Thanksgiving and Christmas are just around the corner and we wanted to share with you a recipe a dessert recipe that has been a family favorite for decades. Chocolate covered dates have been served at our family gatherings for as long as i can remember and are very simple to make.

Only three ingredients are needed

1. Dates (Medjool or Deglet Noor work best)
2. Peanut butter, or a shelled nut like pecan, or walnut whatever your preference
3. Chocolate

Very basic steps as well you don't need a culinary degree to make good chocolate covered dates

1. Select your dates and cut them down the middle length ways don't cut all the way through only until you can open them up like a book
2. Remove the pits and the calyx (located at top of the date not all the dates will have them as they fall off durning harvest and packing.)
3. Fill the center of the date with peanut butter or a nut depending on your preference
4.Melt the chocolate 
5. Using tongs (unless you want to lick chocolate off your fingers) dip the dates in the melted chocolate until covered.
6. Place the covered date on wax paper or other non stick surface 
7. placing the covered dates in the refrigerator or freezer will help the chocolate harden
